Butterfinger Cupcakes Are Beyond Delicious

Thanks to the cupcake revolution in recent years, there are plenty of tasty cupcakes out there to choose from. But these Butterfinger cupcakes deserve a category of their own. Maybe one titled -- mostly insanely delicious treats you will ever ingest. They're that good.

The recipe is from Steph at Plain Chicken. She re-created the recipe after tasting something similar at Disney World. They are simply amazing. Filled with fudge, topped with frosting, then dipped in chocolate and sprinkled with candy crumbs, they will not disappoint. Just look at that picture, and tell me you can't wait to whip up a batch yourself. They're a sweet ending to a Valentine's Day meal, or any meal, anytime.

Butterfinger Cupcakes

1 box Devil's Food Cake mix, plus ingredients to make cake
1 can fudge frosting
3 (3.7-oz.) King Size Butterfingers
4 cups chocolate chips
6 tablespoons canola oil

Quick Buttercream Frosting
18 tablespoons butter, softened
6 tablespoons milk
1 tablespoon vanilla
6 3/4 cups powdered sugar

Prepare cupcakes according to directions on cake mix package. Let cupcakes cool completely.

Using a sharp knife, cut a circle out on top of the cupcake. Make your cut go about halfway into the cupcake. Remove the cake chunk and fill the hole with fudge frosting (I used two spoons to scoop the frosting into the hole). Invert the cupcake chunk on top of the fudge frosting -- you want the extra cake to be sticking up.

Prepare the buttercream frosting: Mix together all the ingredients and beat on medium for three minutes, until fluffy. Transfer frosting into a piping bag and pipe frosting on top of the cupcakes, covering the cake chunk. Let the frosting set up for 30 minutes.

While the frosting is setting up, crush the Butterfingers in the food processor until completely pulverized.

Combine chocolate chips and oil in a medium microwave-safe bowl. Heat on high for one minute. Stir and continue to heat at 30 second intervals until completely melted. Allow to cool for 5-10 minutes before using. (You might want to do this in two batches so the chocolate doesn't harden while you dip the cupcakes.)

Dip the frosted cupcakes into the chocolate -- I used a spoon to hold the frosting into place to make sure it didn't fall off the cupcake. Immediately coat the cupcake with the pulverized Butterfingers -- just smash it all over the chocolate. Repeat until all cupcakes are dipped and covered.

Refrigerate approximately 1 hour to allow the chocolate to set up.

As a man with an avocation for baking and the desire to celebrate the sweet tooth in all of us without apologizing for it, I take pride in my amateur creations and enjoy sharing them with friends and family. This recipe looks promising, but there are two adjustments which will automatically turn it into a winner: toss out the prefab cake and frosting mixes and make your own. Yes, the concentrated effort will take a bit more time, but if you're literate and can measure, stir, and mix an ordered set of ingredients, the difference in taste and texture will justify the extra steps and elevate the flavor profile with more layers and greater dimension. If it means putting aside the recipe until your day off, I promise the results will justify the wait. And if you have children to distract you, put them down for a nap or send them out to play with promises of something wonderful in store. Then, when you've presented your made-from-scratch cupcakes, if their wide-eyed joy isn't enough, consider that you're "educating" their palates into recognizing how the "real thing" tastes as opposed to a sugared mass of chemicals wrapped in cellophane. Vive la difference!

Couldn't have put it better myself! Cake's and frosting aren't difficult to make from scratch, and really don't take much longer. I imagine the recipe would be fantastic if it excluded those two pre made ingredients:)

I'd probably gain 5 lbs just looking at one. The don't mention how many billions of calories there is in one.

Holy Cripes! You would develop diabetes from eating just one of these. I think I'll pass. They sound very yummy, however not too healthy (not that they claimed to be healthy). Think I'll wait to develop diabetes!

This cupcake looks delish! But it might be a tad too sweet for my taste. Only one way to find out...I'll just have to make them, I guess! lol

Well I'll probably never again eat a cupcake in my life, if I am to stick to my diet that is. But I would have loved to at least see the picture!!! Where has it gone?

A cupcake here and there will not kill your diet. A splurge here and there is almost needed. It is unrealistic to stick to a strict diet forever. A better goal is learn healthy eating habits, which include the occasional treat.
