30 Under 30: LA's Hottest Up-and-Comers

Even in a city obsessed with youthfulness, the finalists on our list of L.A.'s 30 most important restaurant-world up-and-comers under 30 stand tall. These youthful culinarians bring a fresh approach to their various jobs. Note how many began working in food and hospitality in their teens -- what we have here isn't so much a career as a calling. Why he made the list: A master at taming the wild nightlife beasts of Hollywood, Ackley was born in Tacoma, and grew up in soggy Seattle, where he studied communication and business at the University of Washington - training that no doubt helped when he moved to Southern California and landed a bartending job at the Malibu Beach Inn, on what's known as "Billionaire's Beach." From there, he tended bar at the Viceroy, at Gordon Ramsay West Hollywood and at XIV by Michael Mina, before becoming nightlife manager at SBE venues like Cleo, Katsu-ya and Hyde Mammoth. At Lexington, his infusion, his juices and his syrups are all freshly made in-house - including an Earl Grey tea-infused Woodford Reserve bourbon with a cult following.
