In his series Marcus' Kitchen, chef Marcus Samuelsson shares dozens of recipes that prove "American" cuisine is really a delicious melting pot that draws upon flavors from all over the world.
In this video, Marcus throws two cuisines into his melting pot -- British and Mexican -- to turn out a unique fried fish and guacamole combo. The fish (a Pacific cod) is coated in a batter that has beer, lime juice and curry powder. After some time in the deep-fryer, Marcus' fish is rendered zesty, spicy and with a nice, thick fried coating. A tart, tomatillo-infused guacamole nicely counterbalances the curry with its strong flavors of garlic, onions, shallots, cilantro and jalapeños. (Tomatillos, also known as green tomatoes, are small fruits related to regular tomatoes.)
