Eggless Egg Salad For A Vegan Easter (VIDEO)

We all know Easter food is all about meat, specifically ham and eggs, but that doesn't leave many options for vegetarians and vegans. Here's the perfect solution -- an eggless egg salad that looks just like real egg salad, but has no meat whatsoever. Watch the video above.

So what is it made of? Firm tofu combined with soy mayonnaise, celery and scallions. All the flavor comes from Dijon mustard, cider vinegar, relish, cumin, turmeric and paprika. The best part about the dish is that it's packed with protein, has no cholesterol and, if you serve it in lettuce cups, almost no carbs. But if you prefer, you could go the traditional route and enjoy the egg salad on toasted whole-wheat bread.
