The relationship you have with your butcher should be a very personal one, where there's a sense of trust and respect for the craft. (Have a go at using a band saw and you'll see why "respect" is an operative word here.) And considering the craziness we know about commercial agriculture and the importance of how animals are raised, it's increasingly important to trust your purveyor of protein.
