The Surprising Science Of Low-Carb Diets

What's the best way to eat if you're trying to lose weight? For years, doctors and dietitians have encouraged us to eat less dietary fat. But growing evidence suggests that obesity comes not from eating too much fat but too many carbs.

One key study conducted recently by Dr. Lydia Bazzano (shown at left), an associate professor of epidemiology at Tulane University in New Orleans, showed that obese people who adopted a low-carb diet lost significantly more weight than obese people who followed a low-fat diet. What's more, the low-carb diet was associated with a greater reduction in high blood pressure and other risk factors for cardiovascular disease.
