There's never a wrong time for pizza, and this pizza-stuffed spaghetti squash makes dinner a no-brainer.
The recipe comes from Yup It's Vegan, and it's entirely meat and dairy free, making it a perfectly appropriate option for Meatless Monday (or any day of the week). Halve a spaghetti squash, remove the seeds and bake it for about 45 minutes. While that's cooking, make your mixture of your favorite tomato sauce, veggies and spices. This particular recipe calls for cashew mozzarella -- a fantastic vegan cheese alternative -- but you can always substitute dairy cheese if that's more your style.
