Bad Ass Trail Mix Cookies from Anna Thomas' Love Soup

On today's episode of Kitchy TV, my old college suite mate Lauren shares with me her fantastic recipe for hearty trailmix cookies, featured in Anna Thomas's Love Soup. We discuss her experience working with chef Anna Thomas, the creative tinkering that led up to the badass cookies, and the joys of a good soup. Lauren's Badass Trail Mix Cookies
3/4 unbleached white flour
1 whole wheat flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup unsalted butter, softened
1/4 cup white sugar
1 1/2 cups packed brown sugar
2 large eggs
1 ripe medium banana, mashed with a fork
2 1/2 teaspoon vanilla extract
3 1/2 rolled oats
1 cup raisins
3/4 cup walnuts
3/4 cup semi sweet
Preheat 350 F
Whisk together the flours, baking powder, baking soda, cinnamon, nutmeg, and salt in a small bowl. In a large bowl, beat the softened butter with the white and brown sugars until it looks fluffy, adding in the eggs one at a time followed by the mashed banana. Stir or beat the flour mixture into the butter mixture until just combined. Stir in the oats, raisins, chopped walnuts, and chocolate until everything is well mixed. With damp fingers, form the dough into rounded mounds for crunchy tea cookies and pat them down if you want a wider, chewier cookie. Place the cookies onto a cookie sheet covered in parchment paper or a silicon mat. Bake for about 16-18 minutes, or until lightly browned around the edges. Reverse the position of the pans halfway through if necessary. Transfer the cookies to a rack while they're still warm and allow them to cool.
