In this video, Gail shows viewers how to make a simple, tasty dish: Mussels Steamed in Pale Ale. Gail loves this recipe because there are endless flavor combinations that can be incorporated into the liquid in which the mussels are cooked, and it takes only 35 minutes to prepare. She starts by heating oil in a large pot over medium heat, and adds finely diced shallots, smashed garlic (she did this using the back of her knife) and thyme. Once the shallots have turned translucent (about two minutes), she adds beer, orange juice, orange zest, lemon juice and lemon zest to the pot. In addition to adding great flavor to the dish, these ingredients will bring out the citrusy notes in the beer.
