Minnesota is F-ing cold. Last week, on one of the coldest days of the year (-25 degrees), I was outside milking goats. Incredibly resilient animals, goats are at home in the deserts of Africa and the tundra of Minnesota. These two gals, named Stelline and Stellita, were guests at my friend Lisa Ringer's farm: Two Pony Gardens. During the milking, the goats milk froze to the side of the Amish-made stainless steel pail in a flash, while the rest came inside for cheese making. Milking on that cold morning, I never thought that holding the warm teats of a goat could feel so good.

Making goat cheese is about the easiest thing in the world (if you have a packet of starter... and a goat). Watch the episode and visit the Recipes page of my website to make your own.
