3 Kid-Friendly 'Breakfast in Bed Menus' for Mother's Day

Sometimes a few extra minutes of sleep is the best thing to do for mom on Mother's Day. While she's resting, the kids can help whip up a special breakfast in bed.

Sometimes a few extra minutes of sleep is the best thing to do for Mom on Mother's Day. While she's resting, the kids can help whip up a special breakfast in bed. These kid-friendly menu ideas are easy and, more important, entirely delicious. Don't forget to add flowers or a card to the tray before you carry it up to Mom!

1. Chocolate Chip Waffles (adapted from Fundoo Times), served with fresh fruit and coffee.
2 cups all-purpose flour
1 tsp salt
4 tsp baking powder
2 tbsp white sugar
2 eggs
1 1/2 cups warm milk
1/3 cup butter (melted)
1 tsp vanilla extract
1/3 cup mini chocolate chips

Have the kids help measure and stir flour, salt, baking powder, and sugar together in a large mixing bowl.

In a separate bowl, beat eggs. Add milk, butter, and vanilla, and mix well. Pour this milk mixture in the flour mixture. Beat well until blended. Sprinkle in chocolate chips.

Ladle some batter into the heated waffle iron. Cook until the waffle turns golden and crisp. Remove and serve. Repeat with remaining batter.

2. Pretty Yogurt Parfait, served with scrambled eggs, buttered toast sprinkled with cinnamon and sugar, and English Breakfast tea with milk.
Low-fat vanilla yogurt
Granola
Chopped walnuts (or other favorite nuts)
Fresh berries (strawberries, blueberries, raspberries, etc.)

Have the kids carefully layer yogurt, granola, nuts, and berries in tall glass.

3. Whole Grain Pancake Art, served with warm maple syrup, bacon, and orange juice.
1 1/4 cup whole wheat flour
1/3 cup cornmeal
1 tablespoon ground flax seed
1 tablespoon sugar
2 teaspoon baking powder
1/2 teaspoon salt
2 eggs, separated
1/4 cup vegetable oil or canola oil
1 1/2 cup milk

Have kids help whisk flour, cornmeal, flax seed, sugar, baking powder, and salt in bowl. In separate bowl, whisk egg yolks, oil, and milk. Add wet ingredients to dry ingredients and whisk until smooth. Beat egg whites with electric mixer until they have stiff peaks. Fold whites into batter.

Heat non-stick skillet or griddle over medium-high heat. Lightly grease bottom of pan with oil. Using the squeeze bottle, squirt out shapes onto the griddle -- a heart, a flower, or maybe even "M" for Mom. Cook pancakes until golden brown and cooked through, about two minutes per side. Transfer to plates. Repeat with remaining batter.
