Today we'll be making the classic dish, Spaghetti Bolognese.. this is a healthy version, and Slimming World friendly if your a member, so also it's very light on syn's.

This recipe will make 3 / 4 portions

As always it's very quick and easy, with ingredients from your local supermarket!

INGREDIENTS:

Lamb Mince - 500g
Spaghetti
Coconut Spray Oil
Chopped Tomatoes - 300g
Carrot - 1
Mixed Red & Green Peppers
Some Water
Green Coriander Leaves
Onion - 1 finely chopped
Worcester Sauce - 1 Table Spoon
Garlic Cloves - 3 minced
Courgette - 1
Oregano - 1/2 teaspoon
Red Chilli Powder - 1 teaspoon
Black Pepper - 1/2 teaspoon
Coriander Powder - 1 teaspoon
Cumin Powder - 1 teaspoon
Salt to taste

Method

Spray pan with oil and add onions and garlic paste and mince.

Mix together then add in the carrots and Worcester sauce, courgettes, peppers, and cover for about 4mins till the veg softens.

Add in the spices and tomatoes, give it a taste and if you need to adjust the spices then go ahead and do so. You can add some water if you want the mixture more saucy.

Cover and cook for about 4 mins, whilst that's happening boil some spaghetti in salted water.

To serve take some spaghetti and top with the mince and garnish with coriander leaves.

It is soo delicious the family will love it.
