Like an operatic soprano, blue cheese will not be ignored. Robust and heady, this miracle of milk and aging is luxurious on crusty bread, the basis for a striking sauce and a potent way to make salads more memorable. 

Blue Cheese Fun Facts 

Blue cheese tends to pair well with a bold or fruity wine and fruits such as figs, dried cranberries, grapes and pears. 

Roquefort, a variety of blue cheese, was reportedly a favorite of the emperor Charlemagne. In France, it’s known as fromage des rois et des papes, or “the cheese of kings and popes.” 

Choose blues that have been wrapped in foil or parchment paper. Regular plastic wrap damages their texture and taste. 

If you’re eating it straight, serve the cheese at room temperature for the strongest flavor and aroma. (Remove it from the fridge at least 60 minutes before you intend to indulge.)
