When we think of easy weeknight chicken dinners, we tend to think of boneless -- often skinless -- chicken breasts. But what's easy about coaxing a lean cut of meat to be more tender and juicy? It can take considerable care and attention. 

With a simple switch of anatomy, you don't have to worry about dry or bland meat. Chicken thighs are self-sufficient, low-maintenance, and less expensive than breasts. It's the cut of chicken that was made for weeknight cooking -- the chicken that allows you to enjoy a glass of wine or catch up on a TV show while you wait for it to be ready.
