5 Addictively Delicious Roasted Vegetables

Roasted Broccoli with Chipotle Honey Butter

High heat roasting is my favorite way to cook broccoli. It's quick, easy and the broccoli emerges from the oven caramelized and full of flavor. Here, the florets are tossed in a sweet, spicy and smoky chipotle honey butter before roasting. It's as delicious as it sounds -- addictive, even -- and the broccoli has enough flavor to carry an entire meal. Pair it with simply grilled salmon or steak and dinner is done! GET THE RECIPE

Curried Roasted Carrots

These sweet and spicy roasted carrots make a fabulous side dish, but they're also delicious all on their own. In fact, on those rare (and dare I say treasured) nights when I'm on my own for dinner and don't feel like fussing with a full meal, I'll make them for myself as a main course. They're like a treat! Balsamic Glazed Roasted Beets

If you're a beet lover like I am, you're going to love (and maybe even obsess over) these simply prepared beets. They're oven-roasted, which intensifies their natural sweetness, and then tossed in a tart and syrupy balsamic reduction. You can serve them as a side dish, but more often than not I just keep them in the fridge for snacking and tossing over salads. GET THE RECIPE

Bookmark this one for the holidays: golden roasted brussels sprouts with smoky bacon, toasted pecans and maple syrup. It's hard to resist eating the entire pan right out of the oven! GET THE RECIPE
