What's The Secret To Fruit In Cake Batter?

The Splendid Table's How To Eat Supper by Lynne Rossetto Kasper

Dear Lynne,

My fruit sinks to the bottom whenever I add it to cake batter. It never looks like the picture. I must be missing something in the recipe. What am I doing wrong?

Dear Lyle,

You didn't miss anything, your recipe did. It should have told you to toss the fruit with a little of the recipe's flour before adding it to the batter. That stops any sinking. As far as looking like the picture, after many disappointments, I have a jaded point of view -- the picture is the lure, but not always the promise.
