Thanksgiving Mascarpone and Cherry Rice Pudding

6 cups milk (OK to use low-fat, never tested with skim)1/2 tsp salt1 cup Arborio rice1/2 cup sugar2 tsp vanilla3 T confectioners sugar1 1/4 cups tart dried cherries8 oz mascarpone, divided into 4-5 large chunks

In a heavy medium saucepan, combine first four ingredients (milk through sugar). Bring to a boil, reduce heat and simmer over low heat, stirring frequently, for 20-25 minutes or until rice is tender and creamy. Stir in vanilla, confectioners sugar, cherries and mascarpone. Mix well. Cover and let stand 10 minutes. Spoon into serving dishes. Serve warm or cold.

Serves 8-12.
