Ingredients:
2 lbs. shallots, peeled
2 cups of cream
1-1/2 tsp. tarragon
1/2 stick unsalted butter
2 Tbsps. Madeira wine
Directions:
Boil shallots 2 minutes, set aside. In mixing bowl combine cream, wine, tarragon. Pour mixture over shallots in baking dish. Dot with butter. Roast 45-50 minutes at 350 degrees. Salt/pepper to taste.
