Did you know that the health benefits of sweet potatoes go beyond clear, smooth and young-looking skin? The same vitamin A that helps promote new skin cell growth has been proven vital in preventing childhood blindness and even death. Helen Keller International (HKI) actively works to promote the growth and consumption of sweet potatoes as just one aspect in full roster of programs that help combat vitamin a deficiency in children. You can read about our program in Mozambique here: http://www.hki.org/network/Mozambique.html

I love sweet potatoes and use them every which way. I don't like them with sugar or the traditional way. They are even better than the regular potato.

It's the breakfast of champions. Seriously. I have one every other day- just baked and let it cool and munch on it like a banana except I eat the peel (organic)....there is no yummier way to start the day.

I rub them in olive oil and bake them.
Put butter and olive oil on them to eat.
We have lots of local organic in In NH.
They taste much better than store bought.

Bake the potato and peel it .....slice into casserole dish....a few pats of real butter....fresh grated ginger and thin, thin, thin lemon slices. A teensy sprinkling of brown sugar. Bake 20 minutes at 350.....

One person's ambrosia is another person's head cheese, so I am not going to tell you you are evil for liking sweet potatoes, but please don't feed those gagilicious carbo-bombs to me at the table or in a pie. They are just too darned heavy A diet of these things would turn me into Can'thopalongGordo.

I prefer rutabagas. Peel off the thick skin, dice them, steam them just right (not too hard, not too soft), slather them with real butter and shake dollops of wine vinegar over them, then salt generously and Yumm.
