We can all eat soy, but less soy gets eaten if we eat it directly. Almost all the soy produced today goes to feed livestock, so almost all the soy grown on former rain forest and cerrado in Brazil is going to feed livestock. Running it through the livestock is a less efficient way of generating food for us, since the livestock use most of what they eat to just stay alive rather than add on meat or produce eggs or milk. You save all that 'maintenance' feed when you eat soy (or something else grown with the same resources) directly.
