I believe the figures were made of fondant. But to choose THIS scene? I think it must have been a groom's cake (in the South, the groom's cake is traditionally modeled on something the groom loves, like his alma mater's mascot, his favorite pro football team, etc. But a dead tauntaun? His wife must be very tolerant. Not too many women would choose this scene).
