HuffPost Food recently joined Chef Michael Paley at the De Gustibus cooking school in New York to watch him prepare a signature dish from his restaurant, Proof on Main, in Louisville, Kentucky.

Chef Paley and Proof specialize in bison, which they raise themselves 45 minutes away from the restaurant at their Woodland Farm.

I have been told there is also a very good chef in Montana that is expert for wild game cooking. I think his name is Vincent Pernicano ( Chef vince) .

I loves my meat when the blood doesn't drip so much and they clean off most of the pus, ligaments, toenails, hair, and e-coli off - and especially when they dress it up all fancy-like, just like

That's good to know, you should not eat unclean food. I love vegetables after they pull it from the ground or chop it off and k.ill the vegetable that was once living and breathing and clean off the pesticides, dirt and cow crap from it. Those are good too. Makes it alot easier to eat something that was once living when it can't make a noise when you end its life.

Proof on Main is an exceptionally swell restaurant...........coolest association with a local Art Gallery in town.......and a fine use of red penguins (not in the sauces)!

Thanks for doing a great job and making downtown Louisville more enjoyable!

I love carpaccio. Had my husband try it for the first time last week. He loved it too.
