She will eventually be Chelsy, Princess Harry of Wales. Everyone knows these two need to sow some oats but will end up together.

I believe Queen Liz will create Katherine a Princess of the UK in her own right before the wedding (allowing her to be be Princess Katherine rather than just Katherine, Princess William of Wales), she won't do the same for Chelsy - she'll be a Duchess or another of Harry's subsidiary titles he'll get when they marry.
