When Men's Health challenged Grant Achatz, chef/owner of the gastronomic temple Alinea in Chicago, to reinvent what may be man's favorite food for our April feature, "Guy Food My Way", Achatz started by asking, "What makes a good burger, anyway?" Then, after a rigorous process of analysis and recipe development, he invited me into his home to cook it with him.
