Easing Into A Vegan Diet, With Kathy Freston

First Posted: 04/07/11 11:23 AM ET Updated: 06/07/11 06:12 AM ET

In this video below, Kathy Freston talks about the virtues of going vegan and the environmental and health benefits that result.

Even if you're not ready for a full vegan diet, Freston suggests going meatless for one day per week. If every American did so for one year, she explains, it would be the equivalent of taking eight million cars off the road.

Thanks Kathy for spreading the message of how amazing veganism is! Eating vegan I get to indulge in the most decadent of delectable foods, but I feel fantastic and healthy after I eat, totally euphoric! Go vegan if you want to feel the best you've ever felt in your life, and look your best as well! :)

Thanks Kathy! This video is great! Vegan is the way to go! How much more proof does everyone need? It has been proven time and time again that countries with the highest meat consumption have higher rates of disease!

"It has been proven time and time again that countries with the highest meat consumption have higher rates of disease!" Um ... no it hasn't. Just one example: India, which has relatively low meat consumption, is very high on the list world-wide for diabetes and cardiovascular disease.

That's actually been disproven, time and time again. Nice try though.

Health benefit? You mean health detriment. For starters you won't be getting fat soluble vitamins like A and D which are so necessary and are only really available in animal fats.

You know, there's these things called the sun and vegetables.

Vitamins A, C, D, E and K are readily found in vegetables and the sun (Vitamin D). Vitamin A, or Beta Carotene, can be found by eating some carrots, tomatoes, leafy greens and fruits like apricots and peaches.

You missed zeeke's point. You can eat all the vitamin-containing foods you want, but if you don't have sufficient dietary fat, you body won't be able to USE the fat soluble vitamins like A and D.

And vitamin B12, where will you be getting that from? A pill...

Apparently you're unaware that human metabolism and physiology are not identical to the metabolism and physiology of all other animals. Example: a cow can survive only on grass; you can't. The ignorance of members of Team Veg on this point never ceases to amaze me.
