How To Pair Roasted Garlic With Wine And Cheese

Facebook fan Ash Worst: I have a bunch of garlic that I'm going to make into roasted garlic. What would be the best type of cheese for roasted garlic? And what would be a good wine?

Everyone loves wine and cheese. Pairing each, however, is considered by many to be almost an entire art unto itself. But really, it's all about what tastes good together. If you're a beginner we recommend getting to know your wine store clerk or your local cheesemonger. They always have a wealth of information to share and will steer you in the right direction.

When you throw an ingredient like roasted garlic into the equation, it makes it a bit more interesting to find suitable pairings. The bold flavor of garlic is toned down a little bit in the oven, but its particular flavor still lingers even after it's cooked. For this reason it requires a wine with oomph and a cheese with bite.

We talked to our friends at Murray's Cheese and they recommend an aged Fontina, Weinkase (a northern Italian cheese soaked in wine and spices), or a good quality Parmesan. Tyler Colman, wine expert and author of the popular blog Dr. Vino, recommends a good Chardonnay from France, specifically one from Jura or Chablis. Also a Fino sherry would work well, because it has a unique nuttiness and oxidative character that would hold up well to the roasted garlic.
