Edamame Fried Rice

In the Pantry Challenge video series, Lauren Braun Costello -- chef, author and food stylist -- shows busy moms how to make meals using ingredients they already have in their pantries, solving their unique cooking challenges. In this episode, Lauren shows Aimee R., a mother of two, and a PR executive, how to make a healthier version of take-out Chinese food: Edamame Fried Rice.

The best part about fried rice is that it's a totally flexible dish. You can add whatever you have on hand -- anything from eggs to chopped pork. Lauren's version is vegetarian, and showcases vibrant green edamame (young soybeans boiled in their pods). She begins by heating a wok (you can use a nonstick pan if you don't have a wok) and swirling oil around it to coat the side. She adds garlic and ginger and lets them cook briefly, then adds scallions and carrots. If the wok gets too hot, just pull it from the heat briefly until things cool down, then continue. Next, she adds a container of leftover white rice. (You need to use day-old rice for this, since freshly made rice contains a lot of moisture and will result in a gloppy mess.) Lastly, she adds edamame, soy sauce and sesame oil, then stirs to combine everything together. Scoop it into a large bowl, and you've got dinner.
