In the Pantry Challenge video series, Lauren Braun Costello, a chef, author and food stylist, shows busy moms how to make tasty, healthy meals using ingredients they already have in their pantries, solving their unique cooking challenges.

In this video, Lauren shows Peggy S., a busy mother of four and registered nurse, how to convince her oldest son to eat fruit -- by sneaking it into a delicious barbecue sauce.

This simple recipe requires only three ingredients: bottled barbecue sauce, two ripe mangoes and the juice of one lime -- but when combined, they make a sweet, tangy, zesty sauce that's great as a dip or marinade. Lauren first demonstrates how to cut a mango, minding the pit and extracting as much fruity flesh as possible. After either using what she calls 'the porcupine method,' or slicing the mango's halves into thirds, Lauren purees the mango chunks in a food processor. She then adds the juice of a lime (extracted using a dinner fork -- a handy tip if you don't have a citrus reamer) and a cup of bottled barbecue sauce.
