Chocolate Fondue

In his series Marcus' Kitchen, chef Marcus Samuelsson shares dozens of recipes that prove "American" cuisine is really a delicious melting pot that draws upon flavors from all over the world.

Marcus points out that the best desserts are those that remind you of your childhood, and this easy-to-make chocolate fondue is a classic. To begin what he calls a "dump and go" dish, he finely chops up some macadamia nuts (other nuts, like almonds, walnuts, or even peanuts would work just as well here). He adds them to a bowl with bittersweet chocolate and heavy cream, then pours the mixture into a double boiler. (A microwave would also work, but it's easier to gauge the melting process with a double boiler.)

Here's where you can get creative. If you like rum, add it. Want some spice? Try cinnamon or cardamom. Whatever you want to highlight the chocolate flavor, go for it. Conversely, don't be afraid to stick with classic chocolate, Marcus says.

Once the chocolate has melted, he pours it into a bowl and, when it's slightly cooled, dips strawberries and cherries into it. Melon and pineapple would also be good, Marcus says.
