  • 1 cup graham crackers, crushed
  • 1/4 cup melted butter
  • 2 cups cream cheese
  • 2 teaspoons powdered vanilla pudding mix
  • 2 extra large eggs
  • 1/2 cup sugar
  • 1/2 cup heavy cream
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • A pinch of salt


  • Preheat the oven to 350ºF. Evenly spread the crushed biscuits in a 9-incg spring-form pan then pour over the melted butter.
  • In a large mixing bowl, mix the remaining ingredients. Pour the mixture over the prepared biscuit base. Bake for 35 minutes. Allow to cool before serving.
