Chunky Gazpacho Sauce

Ingredients

  • 1 pound tomatoes, quartered
  • 1/4 cup chopped red onions
  • 1/2 cup chopped green or red bell pepper
  • 1/2 small cucumber, peeled and quartered
  • 2 tablespoons whole almonds
  • 1/2 teaspoon salt
  • 1 dash hot sauce, such as Tabasco
  • 1 tablespoon sherry vinegar
  • 1 tablespoon extra-virgin olive oil

Directions

  • Place all ingredients in a food processor and pulse until a chunky sauce forms.
