Croque Monsieur

  • 4 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • pinch of ground nutmeg
  • 1 bay leaf
  • 8 slices firm white sandwich bread
  • 8 ounces thinly sliced ham
  • 8 ounces sliced swiss cheese
  • 2 tablespoons melted butter
  • 1/2 cup Gruyere cheese, grated


  • Melt 4 tablespoons of butter in a small saucepan over medium heat. Add flour and stir until thickened (about 1 minute). Slowly whisk in the milk. add nutmeg and bay leaf. Increase heat to medium-high and boil until sauce thickens, whisking frequently, for about 2 minutes. Season with salt and pepper
  • Preheat the broiler. Place 1 slices of bread on a work surface and top each half with a slice of ham and a slice of Gruyere. Top with another slice of bread. Heat a heavy large skillet over low heat. Brush each sandwich with 1 tablespoon melted butter. Add to skillet and cook until golden brown, 2 minutes per side. Transfer sandwich to a baking sheet and spoon the sauce over the tops, sprinkle with grated cheese.
  • Broil until cheese begins to brown, about 2 minutes. Cut each sandwich into 4 small triangles and place on a platter and serve.
