Double-Almond Peaches

Ingredients

  • 31/2 pounds ripe peaches (about 8 ), peeled, halved, pitted and sliced (8 cups)
  • 1/3 cup almond liqueur, or 2 tablespoons sugar, 1 tablespoon water and 1/2 teaspoon almond extract
  • 16 crisp, dry almond cookies (4 ounces), crushed (3/4 cup)

Directions

  • Put peaches and almond liqueur in a glass bowl. Stir gently to mix. Cover and let stand at room temperature 1 hour until juices are released or refrigerate up to 1 day.
  • To serve: Spoon peaches and juices into individual bowls. Sprinkle with crushed almond cookies.
