Herring in Cream Sauce with Apples and Walnuts

Ingredients
- 1 pound pickled herring in wine
- 1 onion, thinly sliced
- 1 cup sour cream
- 2 tablespoons cider vinegar
- 1 teaspoon sugar
- 1/2 teaspoon freshly ground black pepper
- 2 Granny Smith apples, thinly sliced in 1-inch pieces
- 1 cup walnut pieces
Directions
- Drain the herring and reserve the liquid. Cut the herring filets into 11/2-inch pieces and place in a bowl. Cover with the onions and set aside.
- In another bowl, combine the sour cream, cider vinegar, sugar, and black pepper. Taste to verify a balance of sweet and sour. If needed, add a little more sugar for more sweet, or add a bit of the reserved wine from the drained herring for more sour.
- Combine the herring and onions with the sour cream mixture. Fold in the apples and walnuts.
- Refrigerate overnight. Serve with crackers, bagel chips, or pumpernickel bread.
