  • 1 1/2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon finely grated lemon zest
  • 1 1/2 teaspoons lemon juice
  • 5 cups baby arugula
  • salt and pepper to taste


  • Whisk together lemon zest and juice, and oil in a large bowl, then toss with arugula and salt and pepper to taste.
