Moroccan Salmon

  • Heat oven to 425°F. Have ready a large baking dish.
  • Heat oil in a large nonstick skillet over medium-low heat. Add onions, garlic, cumin, turmeric, salt and cinnamon. Cover and, stirring occasionally, cook 10 minutes or until onions start to soften. Stir in remaining ingredients except salmon; cover and cook 3 minutes or until tomatoes begin to soften.
  • Place salmon in one layer in baking dish; top with onion mixture. Cover tightly and bake 20 to 30 minutes until fish is opaque at thickest part. Discard bay leaf.
  • Good with whole-wheat couscous.
