Nutty Sweet Potato, Butternut, Arugula and Goat Cheese Salad

  • Preheat the oven to 350ºF.
  • Dust the sweet potato with cumin and the butternut with cinnamon. Place on a baking tray, drizzle with olive oil then roast for 20 minutes. Allow to cool.
  • Layer the lettuce and rocket on a serving platter. Pile the roasted vegetables on top of the leaves, then crumble over the goat’s-milk cheese. Drizzle with the warm dressing then scatter over thinly sliced red pepper and sprinkle with almond.
  • FOR THE DRESSING:

    Simmer all the ingredients in a saucepan until slightly thickened.
