- Pat pork dry with paper towels. Sprinkle all over with salt and pepper . Heat oil in a 6 to 8-quart pressure cooker pot over moderately-high heat. Brown tenderloins all over until browned, about 6 minutes. Transfer to a plate.
- Combine garlic, onion, water, bbq sauce, and vinegar, in the pressure cooker, then add pork and bring to a boil. Cover and bring to high pressure (according to your manufacturers directions). Reduce heat to maintain high pressure and cook until meat is tender, about 40 minutes (depending on your pressure cooker). Transfer to sink and run cold water on the top of the pot to quick-release pressure. Open lid and transfer meat to a plate and boil liquid until slightly reduced, about 5 minutes.
- When roast is cool enough to handle, with hands or fork, shred meat into bite-size pieces. Return pork to Dutch oven, stirring; heat through.
