Roasted Asparagus

  • Heat oven to 425°F. Have a 15 1/2 x 10 1/2-inch or larger jelly-roll pan ready.
  • Put asparagus in pan. Drizzle with oil and sprinkle with salt and pepper. Turn until evenly coated, then arrange in a single layer.
  • Roast 10 to 15 minutes or until tender when pierced and tips start to brown. Serve immediately or cool in pan, cover and refrigerate.
  • To serve: Reheat in a 350°F oven 5 minutes. Serve with lemon wedges.
  • Planning Tip: Can be made up through Step 3 up to 1 day ahead.
