Roasted Sweet Potato and Quinoa Tortilla

- 1 pound store bought or homemade roasted sweet potato, quinoa and arugula salad
- Pumpkinseeds, toasted, for sprinkling
- 2 tablespoons pineapple, papaya, orange and apple smoothie, or some other organic smoothie
- Sea salt and freshly ground black pepper, to taste
- Extra virgin olive oil, to drizzle
- Place the toasted tortillas on a board and top with the roasted sweet potato, quinoa and fresh arugula. Sprinkle with the warm toasted pumpkin seeds and a light drizzle of the smoothie. Finish with sea salt and freshly ground black pepper, and a drizzle of olive oil.
