7 March Superfoods

The Huffington Post   Catherine Pearson   Posted: 03/ 1/2012 7:21 am

Depending on where you are in the country, March can mean very different things. For some, it is truly the start of spring, with warmer weather and plants popping out of the ground. For others, the month still means one thing: Winter. Also, snow.

Not coincidentally, that duality is represented in the month's best produce -- some of March's fruits and veggies are perfect for a hearty meal on a cold night while other options are light, juicy and smack of the new season.

Here's a list of our picks for seven March superfoods -- foods that run the gamut, flavor-wise, but that all pack a nutritional punch. Any favorites we forgot? Let us know!

Why we love it:
Honeydew melons, which start coming into season in March, are sweet and juicy. According to WebMD, they're also a great source of vitamin C -- with a wedge providing more than half the recommended daily amount.

How to enjoy:
First, ripeness is key. WebMD recommends picking a melon that feels "heavy for its size" and with a surface that bounces back when pressed.

Once you've selected the right melon, you can simply enjoy it as-is, toss it into a sweet or savory salad or try it in a refreshing spring soup.

Superfoods are all fine and good if you eat organic. Artichokes are full of pesticides because otherwise they get wormy because of the leaves being close together. In 2009, there was a lot of news about a company that invented an EASY-TO-USE DIPSTICK that would measure the pesticides in your food in seconds. Now, there is no evidence it ever existed, the company has no more website, and the most recent article about it is from years ago. You can be sure their patent was bought by Monsanto and who knows WHAT happened to the people who invented it...silenced somehow. Too much at stake.

I love brussel sprouts. They get a bad rap, but if you mix them with olive oil, minced garlic and a sprinkle of sea salt, then cook in a 400 degree oven for about thirty minutes (less if you cut them in half) they are fabulous. The outside leaves get kind of crunchy and caramel like.

If they are going to mention artichokes, then they should mention it's relative cardoon. Similar taste to the choke heart, but you eat the leaves. Easier to grow for us northeners....for those who prefer to eat local....

Artichokes are hard to grow because worms get between the tons of leaves. So they are completely doused in chemicals - especially the ones that look really nice.
