If you're the kind of person who loves desserts with a bit of tartness, then rhubarb is for you. You'll most often find rhubarb baked into a pie filling (sometimes paired with strawberries), but there are more possibilities you should taste. Try classics like rhubarb crisp, cobbler and bread pudding or bake it with some sugar to create a versatile topping for ice cream, pudding or even breakfast foods like waffles. Known as "pie fruit," rhubarb is actually a vegetable that looks sort of like celery stalks. It ranges in color from pale green to crimson red, both of which are fine for recipes. You'll find rhubarb in the market from now until June, when rhubarb hits its seasonal peak. But supermarkets sell it throughout the winter since it's so easy to grow in greenhouses (though you'll find it's more expensive then). Search for stalks that are crisp, rigid and preferably thin -- thicker staks will tend to be too fibrous. If you're not using rhubarb right away, keep it wrapped in plastic and store it for up to 1 week in the refrigerator.
