Right now in supermarkets all over the country, shelves are stacked with boxes of matzo (and we should know since we've taste-tested almost all of them!). As many people know, matzo is a key component of Passover, the Jewish holiday that begins on April 6 this year. The flat, unleavened bread is traditionally eaten during the holidays to commemorate the ancient Jews' exodus from Egypt. But matzo doesn't have to be limited to only the seder table -- matzo is great year-round in many recipes, functioning as a binder much like flour. Besides the classic latkes and matzo balls, try using matzo in pancakes, cake, brittle and more -- take a look at the slideshow below to see all the possibilities (these recipes are not necessarily kosher).

All of our recipes use matzo meal, crumbled matzo or matzo farfel. Or you can easily make your own matzo meal by simply grinding matzo in your food processor. Feel free to use regular or whole-wheat matzo in any of the recipes.
