Fresh Mint Recipes: 20 Recipes To Brighten Up Your Plate (Photos)

Nothing says spring quite like fresh mint. Its flavor embodies everything of this blooming season -- light, fresh and bright. Its light green color is a welcome addition to our plates, especially after all the months we've spent looking at winter produce. Mint goes very well in lemonades, teas and cocktails, but we also really like cooking with this fresh herb.

Throwing fresh mint into a salad will liven up the flavors, and adding it to a pasta can make the dish feel much, much fresher. But the best part is, it's absolutely delicious. And we just can't get enough of it; we're always looking for ways to throw it into whatever meal we can think of. If you're ready to enjoy the fresh flavors of this herb, click through the slideshow below for some culinary inspiration. From Orecchiette with Pancetta, Peas and Mint to a simple Spring Peas with Mint recipe, there's a recipe for every mint lover.

If you're one of those people who still claims to hate Brussels sprouts, we guarantee you'll change your mind after trying this recipe. The sprouts are well browned, giving them a nice charred flavor. They're then tossed with Rice Krispies (that's right, the snap, crackle and pop kind) and dressed with a sweet-and-spicy vinaigrette.

Of course the first thing mentioned by an American about Mint is how Pretty it looks in food. Forget it's Medicinal properties. Only the SURFACE aspects would be worth mentioning to a surface Minded American Materialist!

how sad for this prejudiced writer...

from an American: there is a delicious summer squash recipe called "Squash Ferguson" made with onion, sour cream and FRESH MINT........but since I've been insulted from the outset, all I'll suggest is to try Google for the recipe
