Taste For Pork May Be Determined By Genes, Study Finds

Like the taste of pork? You might have your genes to thank for it, according to a new study.

Researchers from Duke University Medical Center, Monell Chemical Senses Center and three Norwegian institutions asked people with different variations of an odor receptor gene to rate the taste and smell of several pork meat samples. The particular receptor is sensitive to androstenone, a steroid similar to testosterone found in male pigs.

Those with one version of the gene rated the pork samples more favorably in taste and smell than others, leading scientists conclude that genetics play a significant role in how we perceive what's delicious.

Participants had wildly different reactions to androstenone:

While some subjects are insensitive to androstenone, others are highly sensitive and will react negatively upon exposure. Androstenone in meat has been associated with flavours described as urine-like, etching (ammonia), pungent and sour.

The study also cites a recent survey that identifies 39 percent of Norwegian consumers as sensitive to the compound, with negative reactions to higher levels of it. But most people in North America and Europe don't notice androstenone at all, because male pigs are usually castrated and the concentration of the compound is quite low as a result. That might change though, as the European Union mulls a castration ban on the grounds of humane treatment.

At any rate, the researchers suggest meat with less androstenone might sell better in the marketplace. Still, taste can't be explained by one single variable.

ABC News spoke with Monell Chemical Senses Center's director, Gary Beauchamp, on the subject. "When food is in your mouth, odors come from the back of the throat up to the nose," he said. "Taste is very complex. It depends on smell and other factors, such as personal experience and genetic background."

we were just talking about that at lunch as I was cooking bacon. I said I had a genetic predisposition to bacon. we laughed but now I know I can't help my love for bacon - I'm drawn to it.

I am a Black man and I LOVE pork, I eat every part of the pig ears, feet, chitterlings, ribs, chops, roast and crackling. Nowadays many Black folks are rejecting pork for religious reasons or health reasons.

i like honey and maple glazed hams pork shops ribs Bacon i like pork better then lobster and beef. the Religious and health reasons for not eating pork are unfounded. im not going to deprive my self of a good meal based of of archaic teachings that no longer apply in modern times.

I am a White man and I LOVE pork, I eat every part except the chitterlings. How do you fix them so they are good?

I can tolerate them and had them very crisply fried in spain and it was okay but I will take an ear over an intestine any day.

I am from Louisiana so it's not like I was not exposed to chittlins.

I don't fix them, PARKS (the sausage folks) sell frozen chitterlings and they're very good. Since you're Louisiana I'd guess you could find them at a Soul Food Restaurant in your town or city. I'd use google find a place who have them on their menu. I suggest when you eat them, have some excellent potato salad for a side. If you love pork , you'd enjoy the chitterlings. If a hogmah comes with them, you've hit the jackpot!-- Good eatin, Enjoy!

We'd rather be "hale and healthy" than "satiated and sick". Boy are we in the tiny minority, in our 70's, no meds, fit, my wife does 5K runs and also triathlons. We're vegans - no dairy, no eggs, no meat, occasional 4 oz. wild caught fish, no counting calories, BMI on target. My wife's endocrinology and liver test results spot on, even high normal on calcium and magnesium the bone minerals all from vegetables, fruits, legumes, nuts, whole grains (B12 tablets too). What we'd really like is for people to actually know the choices they make - do you want pork, diabetes 2, causing early aging, or "hale and healthy"?

I must admit,.... I loves me a good pork chop,... my German genes lead me to a fine pork sausage,... and bacon is never a bad thing.

I wonder if there is a similar set of genes involved in like/dislike of Lamb?

I wonder how it works in cultures that regard pork as *haram* or *taboo*. I'm guessing none of those types were invited to do the study.

I have loved ham all my life. Never noticed any wierd smell, so I must be pork-positive. And never been struck by lightning, so I'm safe to go home and offend a couple of deities with a ham sandwich.

I don't know about Muslim, but I used to live in an Orthodox Jewish area. They get around this taboo by eating imitation bacon made out of beef. probably a lot healthier, but I have no idea what it tastes like.
