There's something special about raspberries -- pop one in your mouth and you're rewarded with a sweet-tart experience that speaks to summer. When raspberries are at the height of their season, they're better than anything you can get all year long in the supermarket. That's the time to enjoy them with abandon, but not just eating them fresh as they are. Raspberries are amazing in desserts -- their flavor remains pronounced even when they're cooked.
Right now you can find raspberries at the farmers' markets and in many cases at pick-your-own farms. Raspberries are available all summer long, because there are early, mid-, and late-summer varieties. Late-summer ones are intensely sweet and make terrific jam (see our recipe below). You may also find black raspberries at the markets -- they're a little smaller and mellower than red raspberries. Both red and black raspberries leave behind a small knob called a "rasp" when you pick them off the bush -- this is what differentiates them from blackberries, which have a core.
