Either you've got a ton of tomatoes from a very bounteous garden or you've picked a bushel of peaches at the farm -- now what do you do with all that fruit? If you're going to make tomato sauce or peach pie, one of the first steps is to peel the skin. You might want to reach for the vegetable peeler, but back away -- you'll end up wasting a lot of the prized flesh if you use a peeler, not to mention you'll probably squish the ripe fruit. Well, not to worry, because there's an easy method for getting the job done.

Saveur's kitchen director Kellie Evans shows us the easy way for peeling soft-fleshed fruit like tomatoes and peaches (the method works on all stone fruit too). All it takes is dropping the fruit in boiling water for mere seconds, then transferring them to an ice bath and peeling the skin (it helps if you put an X on the bottom of each fruit beforehand). Now you can cook with tomatoes and peaches to your heart's content.
