Zucchini makes a really good filling with onions. This time of year there are excessive amounts of them. Just grate them (a lot as they cook down) and sautee with onions, use a white sauce with monterey jack and green chiles. Chop green onions and cilantro on top....So good.

The only type of enchiladas that are acceptable in my book are green chile blue corn chicken enchiladas. Make everything from scratch, because tortillas are insanely easy to make and taste way better fresh and jarred green chile sauce is either impossible to find or far too salty out of state.

Sounds delicious.

I've never done tortillas from scratch because it is insanely cheap to get fresh locally. I've got two places within blocks of me.

I have several "go to" recipes. One is chicken, one is cheese and one is spinach. One uses a white sauce rather than red. I usually make my sauces from scratch as I don't like the canned enchilada sauces.

I'm going to try the enchilada pie recipe.

I know exactly what you mean. I usually get them from the tiniest, oldest woman in the world who makes them in her kitchen at home. Absolutely, insanely good. It's hard for a lot of people to find them, though, and it's too easy to buy those weird, waxy ones at the store!
Spinach sounds delicious. What kind of white sauce do you use?
