Velvet Cake Recipes In Every Single Color (PHOTOS)

When it comes to velvet cake, why does red get all the glory? These buttermilk cakes are just as good -- and maybe even a little more exciting -- when made with other colors. Because that's all that velvet cakes are (in case you're one of the many thousands who isn't quite sure), just buttermillk, a touch of cocoa powder and food coloring. And red has had its moment, it's time to give other colors a chance.

While its origin is unclear, most people believe that this cake got its name becuase of the reddish hue that was produced by the reaction between natural cocoa powder and buttermilk. But now we use food coloring to heighten the color. And since we're using food coloring, why not have some fun? Check out these velvet cakes in green, blue, orange and pink. And we threw a few red ones in there just for good measure.

More food coloring? With all of the news recently about the adverse health effects of food coloring especially for children, I am surprised to see this article. Aesthetically the cakes look good however I would NEVER eat it let alone feed it to my 3 year old. It would have been helpful to give options for organic food coloring that could be used as a substitute for the chemicals.

Pretty to look at but with all the information coming forward about food colorings and dyes IE: sensitivities, links to ADHD, and petroleum in the dyes to enhance the color of processed foods, I think I'll pass.

Beets. "While foods were rationed during World War II, bakers used boiled beets to enhance the color of their cakes. Boiled grated beets or beet baby food are found in some red velvet cake recipes, where they also serve to retain moisture. "

I work with a bunch of people who LOVE red velvet cake, I never got the appeal. it's chocolate cake with red food coloring, and I am squeamish about red food coloring, since some of it is made from beetles. What's wrong with plain chocolate cake?

I swear half the women in my office would say red velvet is their favorite cake, but couldn't distinguish it from chocolate if they were blindfolded.

I'm an accomplished home pastry cook who has a reputation for making outstanding red velvet cakes. Personally, I agree with you; most folks wouldn't know what it was if they were blindfolded. Honestly, I think it's the cream cheese frosting combined with the chocolate cake. Agreed on the colors of cake. No way on blue or black. The after effects are too weird.

I was at a party where blue flowers made of icing turned everyone's mouth into an unsightly pit with blue tongue and tinted teeth. Perhaps Lavender or Light Green, but Rich Blue or Black: no thanks. That could be part of the reason Red has been popular, it doesn't make people look like they just blew a zombie.

The red cake recipes from the early 1960"s also had a little vinegar, but the outstanding feature of the earlier recipe was the icing that was made by starting with a roux, then whipping it into vegetable shortening.
