Barley Recipes: Eat Your Way To Good Health (PHOTOS)

If you're not familiar with barley in its grain form -- most of us know it as an ingredient in our beers or beef stews -- it's time you get to know it. Not only does barley, a cereal grain, make a perfect substitute for rice or risottos in most dishes, offering a pleasant nutty flavor, but it's also incredibly healthy for you -- some would call it a superfood.

We know health food normally gets a bad rap, but you should give barley a chance -- we promise, it's not at all like taking a shot of wheatgrass -- you'll actually enjoy eating it. Especially when it's made into creamy risotto.
